Spring…..One day is freezing cold, the next day, it’s warm. The first sign that spring is in the air is when you start to see people in their high summer fashion garb. There are always those days when some people are bundled up and others are walking around without a jacket — it’s too confusing. Days are getting brighter, longer and the cold air will soon be replaced by a warm breeze.
Spring in all its glory will soon be here to stay with its colour and flavour — crispy and crunchy British vegetables such as Artichoke, Cucumber, Leeks, Beetroot, Cabbage, Carrots, Chicory, New Potatoes, Kale, Radishes, Rhubarb, Rocket, Sorrel, Spinach, Spring Greens, Spring Onions, and Watercress will all start to take centre stage on many restaurant tables across the UK.
